Unlike Edomae eel, the eel used in Bincho Hitsumabushi is grilled on the grill rather than steamed, so it's crispy and fragrant on the outside and fluffy and juicy on the inside.
The secret sauce made with tamari soy sauce brings out the flavor of the eel and goes perfectly with the broth for dashi chazuke.
The registered trademark "Bincho Hitsumabushi" can be enjoyed three times in one, and is a special delicacy that can hardly be found anywhere else.
