The cookie dough is kneaded with lemon peel powder, and each one is carefully pressed and baked. The buttercream is mixed with lemon zest (finely chopped lemon peel), and the caramel paste is mixed with lemon curd (lemon juice paste), and these two layers are sandwiched together.
By using lemon in every component, we have achieved the perfect balance of refreshing acidity, invigorating aroma, and a subtle bitterness that adds a nice accent.
